Hi Suzy,
Regarding your whole wheat pita’s. I am really glad have finally found a recipe with only whole wheat flour and not a lot of oil.
I have one question though, some of my pita’s did puff up in the oven and some did not completely puff up, though they were still very good. What are your doing exactly to make all of them puff up in the oven? Do you keep them covered even after you’ve rolled them out before putting them in the oven? Thank you for your time and help.

Hi Shani,
What a great question. I am not sure why they are not all puffing. I keep all of them covered even after I have rolled them. I keep them covered until they are placed directly into the oven. Make sure your oven is warm enough. Sometimes I notice that when it is not warm enough they do not all puff. I hope those two tricks will work for you.
