Borek is a baked or fried filled pastry. It can be filled with cheese, meat or veggies. For this recipe, I use spinach; it is delicious. It originates from Modern Day Turkey. Borek roll is usually prepared in a large pan and cut into portions after baking or as individual pastries before baking or frying..
Ingredients
- Borek dough (can get from local Mediterranean grocer) or light easy dough (dough recipe coming soon on www.suzyeats.com)
- 6 cups fresh spinach leaves (~1 bag)
- 1 teaspoon salt
- 1 medium yellow onion chopped
- 2 small tomatoes chopped (remove seeds)
- 3 tablespoons lemon juice
- 1/4 cup olive oil
- 1/2 teaspoon sumac
- 1/4 teaspoon crushed red pepper
- vegetable or canola oil for frying
How To:
1. Wash and drain the spinach. Chop it.
2. Combine the spinach salt, onion, tomatoes, lemon juice, olive oil, sumac, crushed red pepper and mix well.
3. Roll out the borek dough. Cut pieces of borek dough into strips.
4. Place about 1 spoonful of spinach mixture into the borek dough and roll it up.
5. Heat vegetable or canola oil in a frying pan. Once it is heated add the rolled spinach borek for ~ 3 minutes on each side or until brown and crispy.
6. Remove and place on a paper towel to drain the excess oil.
7. Serve warm and enjoy!!

I see I am not the only one who noticed the dough looks like a spring roll wrapper. The recipe sounds so delicious. I am thinking they would be great made hors d’oeuvre size.

I only know of very spicy, meaty borek, so this recipe is a delight. Turskish cusine got so much to offer, it is unbelievable. From fast food to desserts…hmm…anyone tried turkish deserts? They are GREAT!

I bought a beautiful stalk of spinach and I want to know how to make the easiest Spinach pie. I usually do a wrap and I get the sandwich press to make it warm, but I want to try something different. Thanks!

Spinach is not one of my favorite veggies but i am sure i would like these with other veggies. It almost looks like spring rolls.
Instead of buying the dough, i would just wait for your recipe…Hehe. These boreks would just be fresher that way.
