I was asked by a national organization to begin to write recipes for people with diabetes. I am very honored to do so and have decided my very first recipe will be Healthy Mediterranean Pita Pizza. This meal is so yummy and anyone and everyone will love it (not just those with diabetes).
It only has about 250 calories, 5g fat, 1g saturated fat, 41 g carbohydrate, 3g dietary fiber , 8g protein.
Ingredients: (makes 1-2 pita pizzas)
- 1 pita bread
- 1/4 cup tomato, chopped
- 1/4 cup cucumber, chopped
- 1 tablespoon lemon juice
- 1/2 tablespoon olive oil
- 1 teaspoon oregano
- 1/4 teaspoon crushed red pepper
- 2 tablespoons hummus
- 1 tablespoon sliced olives
- 1 tablespoon crumbled feta cheese
How to:
1. Place pita bread in a microwave for ~15 seconds to warm and soften or place in a toaster oven/ oven at 350 degrees for about 10 minutes to warm it up.
2. Chop the cucumber, tomato and olives. Toss the cucumber, tomato and olives with the lemon juice, oregano and red pepper together.
3. Remove the pita bread from the microwave or toaster oven/oven.
4. Spread the hummus on the top evenly.
5. Top with cucumber, tomato, olives and cheese.
6. Enjoy!!

Oh my gosh, this looks so delicious! Thanks for sharing this recipe with us! Is Hummus really required or there could be something else used instead? I visited 3 grocery stores in the past and nowhere could find it!

hummus is part of what make it mediterranean healthy. you could always make your own hummus with chickpeas. you can also try another type of bean spread if you like such as lentils.
