    My all time favorite recipe to cook is Stuffed Chicken with rice and ground meat. Somehow i feel that making this recipe carries a lot of care and love to the ones i serve it for.
    making this recipes brings back memories of my grandmother and mother making it for lunch with the whole family around, eating and enjoying it with many other side dishes such as tomato stew, Mulukhyya, yellow rice topped off with fried pine nuts or white rice with vermicelli. such great memories.

    My All Time Favorite Recipe is Stuffed Squash (Koussa Mehsheh)

    Ingredients:
    10 medium sized green squash
    1 cup of washed rice
    1/2 pound ground beef (98% lean)
    1 small onion chopped
    1 small tomato chopped
    14.5oz can of diced tomatoes
    8oz can of tomato sauce
    4 lemons, squeezed
    1 tablespoon of vegetable oil
    black pepper
    cinnamon
    1 tablespoon salt

    How to make the stuffing:
    Mix the ground beef with the rice, tomato and onion. Add the tablespoon of salt and a dash of black pepper and cinnamon. Add 1 tablespoon of vegetable oil, it keeps the rice from sticking together

    Next tunnel out the squash using a special cooking tool called a munara, a squash corer, being careful not tunnel out so much that you pierce through the squash

    Stuff the Mix into the squash but make sure to leave 1 inch for the rice to be able to expand

    Place the squash into a pot and add the can of diced tomatoes, tomato sauce and a dash of salt. Add the squeezed lemons. Add a enough water to cover the squash by 2 inches.

    Let the sauce boil, then lower the heat to medium and let simmer for an hour and a half.

    Voila! You have made koussa mehsheh. This stuff tastes delicious with cold laban (yogurt) on it.

    You can take the mix and put it inside grape leaves, making warak 3inab.

    Hey suzy! my favorite middleeastern dish is, sadly, hummus. i know it’s plain but hear me out: its sooo versatile. you can use it as a dip OR a spread on bread, and u can use with veggies, fruit or crackers. My OTHER favorite is stuffed grape leaves. I could eat them all day long! I will follow on facebook and twitter, just because I am really in love with mediterranean food and would love the cookbook! I am convinced I can veganize any dish that has meat in it ๐Ÿ˜‰

    My favorite Middle Eastern dish is tabouleh, and for dessert – don’t know what it’s called but it’s a little cake made with semolina flour and drizzled with a sweet rosewater or orange syrup.
