I’ve never been particularly good at following recipes to the letter.  Even my best efforts veer off course, but I posit that this is not a bad thing. A good recipe is like a melody, and a good melody allows the musician to riff and improvise. Case in point – I once discovered a recipe for salmon that involved lemon and fennel. Mediterranean Egg-Lemon Soup

The egg and lemon mixture is a tradition in the Mediterranean culture. There are many differents sauces and soups made with this mixture. I have listed below the pronounciationsof this amazing “egg-lemon” flavor in various Mediterranean cultures . 

  • “Avgolemono” in Greek
  • “Tarbiya” or “Beida bi-Lemoon” in Arabic
  • “Terbiye” in Turkish
  • “Agristada” in Sephardic Jewish culture
  • “Bagna brusca” in Italian

Here is the Suzy Eats’ version of this yummy dish! I have tried to “healthify” it by including fresh ingredients and using olive oil instead of butter 🙂

Friday Feast: Fresh FALAFEL from scratch

Falafel is a fried ball or patty of spiced garbanzo beans. It is one of the most popular dishes across the Mediterranean region. It is also a very common vegan dish. Once you try falafel from scratch, it will be very difficult to eat it from the box 🙂 TRUST ME. There is no substitute for falafel from scratch.

Serves: 10-12

Ingredients:

  • 16 ounces of dried garbanzo beans
  • 1 cup fresh parsley (must be fresh)
  • 8 garlic cloves minced
  • 2 teaspoons salt
  • 2 teaspoons cumin
  • 1 teaspoon crushed red pepper (optional)
  • 1 teaspoon sesame seeds (optional)
  • 1 teaspoon black pepper
  • 2 teaspoons baking powder (added 15 minutes before frying)
  • 3 teaspoons corn starch (added 15 minutes before frying)
  • 8 ounces of water
  • vegetable oil for frying

Friday Feast: Rice with Noodles “Riz bi Sh’arieh”

Rice with noodles or “RIZ BI SH’ARIEH” is my husband’s absolute favorite type of rice. It is great as a side dish. It can be served with your favorite stew or soup; it can even be served on its own with a great salad. When I first met Will, I had difficulty with getting the noodles just the right color, but I can finally say that I have perfected this dish 🙂

I have included my recipe below. If you haven’t tried it yet, I recommend it. Your guests will definitely be pleased, and they will notice that your rice looks and tastes special. Friday Feast: Mediterranean Pizza Dough, Sauce and More

Pizza…a Mediterranean Staple. It is healthy for so many reasons and it is tasty for so many more 🙂 I have recently began to make pizza from scratch. It is a lot yummier, healthier and cost effective. Below is a recipe for the dough and the homemade pizza sauce. You can add any toppings you would like. Bake for ~20 minutes in the oven at 350F and you are set to go 🙂
