As promised here is a recipe for homemade pita bread. If you want it to stay fresh just place it in a plastic bag after baking and freeze it. It should last about 1 month that way. Just take a piece out of the freezer and warm it up when you would like to eat it.
Otherwise go ahead and enjoy it right away 🙂 It is great warm!! 🙂 and it should last about 1 week.
Ingredients
- 2 teaspoons of quick rising yeast (1 package)
- 1 & 1/2 c warm water
- 3 cups flour (white or wheat)
- 1 teaspoon salt
- 1 teaspoon white sugar
- Canola or olive oil to coat the dough while rising
Instructions:
- Dissolve the yeast in 1/2 cup of water and sugar. Let it sit for ~10 minutes until bubbly.
- Combine the flour and salt in a bowl.
- Make a depression in the middle of the flour/salt mixture and pour the “bubby” yeas mixture in.
- Slowly add 1 cup of warm water and stir until elastic.
- Take dough out and knead for ~10 minutes (or until your hands get tired) on a floured surface.
- When you are done kneading, place the dough in a bowl and coat it with oil (the bowl and the dough). You can roll it around the bowl so that it ihas a light coat of oil on all sides.
- Cover the bowl with a damp kitchen towel and set aside till the dough rises (about 2-3 hours).
- Once doubled, punch dough down and release some of the trapped gas.
- Roll out the dough into a rope and pinch off about 10 pieces.
- Place the balls out into circles about 1/4 inch high and 5 inches long on a floured surface and let them sit covered for ~20 minutes (damp towel)
- Preheat the over to 500F.
- Make sure your baking sheet is also preheated. I use a brick stone to bake on that I purchased at BedBathand Beyond. An upside down cookie sheet will also work.
- Bake each circle for about 5 minutes until bread puffs up. You can turn over and bake for 2 more minutes. (The longer you bake the crispier the pita.)
- Remove each pita from the oven and place additional ones into the oven for baking.
