“Seven Spice” is a tasty must-haveĀ used in Mediterranean cooking. It is great on meats (lamb, beef, steaks, burgers, chicken šŸ™‚ ). It is also tasty on veggies.Ā Seven spiceĀ has a very exotic flavor that is sure to excite all of your taste buds. I have listed the ingredients below. Feel free to try and make it orĀ  you can purchase it from a Middle Eastern market. It also makes a great gift šŸ™‚ You can wrap it up and decorate a beautiful spice bottle….

Ingredients

Ā¼ cup black pepper
Ā¼ cup cumin
Ā¼ cup paprika
2 tablespoons coriander
2 teaspoons nutmeg
2 teaspoons ground cinnamon
2 tablespoons ground cloves
1 teaspoon ground cardamom

How To:

1. Mix all of the ingredients together well.

2. Store in an airtight container or you can freeze it.

Beef Shish Kebob Recipe

Kebob or Kebab is a type of meat dish that can be found worldwide. Kebob usually refers to a shish kebob served on a skewer. In the Middle East it includes grilled, roasted and stewed dishes of meat. Traditionally, lamb is used in a kebob but you can also use beef, goat, chicken, fish, seafood or veggie style with falafel or tofu. Kebobs are excellent for summer barbeque.

Ingredients

  • 2Ā pounds beef,Ā cubed
  • 1 green pepper, cubed
  • 1 onion, cubed
  • 1 yellow pepper, cubed
  • 2 tsp salt
  • 1/2 tsp black pepper
  • 1 tspĀ seven spices or mixed spice (available atĀ Middle Eastern market)
  • 2 tablespoons olive oil
  • wood skewers

Spicy Feta Cheese Almond Dip

I love feta cheese. It is definitely one of my favorites. By combining it with almonds (one of the healthiest foods around), you can really have one of the best Mediterranean Dips with your friends. It can be served with pita chips, olives or veggies. Be creative šŸ™‚

Ingredients
1/2 cup almonds
2.5 cups feta cheese, crumbles
1/3 cup milk
1 teaspoon oregano (dried)
1 teaspoon crushed red pepper flakes
1 teaspoon garlic powder
1 teaspoon parsleyĀ (dried)
olive oil and pita chips to serve

Yummy Cole Slaw Recipe

With plans for a big July 4th party, I have started pulling out many of my recipes for the event. I am going to start with Cole Slaw which is definitely one of my favorites.

Ingredients

  • 1 head green cabbage, shredded (about 2.5 cups)
  • 2 large carrots, shredded (aboutĀ 1.5 cups)
  • 1/4 cup purple lettuce, shredded
  • 3/4 cup mayonnaise
  • 2 tablespoons sour cream
  • 1 small yellow onion, diced fine2 tablespoons sugar
  • 2 tablespoons white vinegar
  • 1 tablespoon yellow mustard
  • 2 teaspoons celery salt
  • 1/4 teaspoon black pepper

Fattoush Salad Recipe….Salad with Pita Bread Croutons

Fattoush is a very common Mediterranean salad made with fresh toasted, baked or fried pita chips, romaine lettuce and “tons” of vegetables. The vegetables in this salad are cut into relatively larger pieces compared to other traditional salad which has more finely chopped veggies. The key ingredient with Fattoush is Sumac. tabbouleh which requires ingredients to be finely chopped. Sumac gives the salad a tangy, lemon flavor. I use baked pita chips for a healthier version.

Ingredients

  • 1 romaine lettuce heart, chopped (~10 leaves or 2 cups)
  • 1/2 cup parsley, chopped
  • 1/2 cup mint, chopped
  • 1/2 cup green onion, choppedĀ (~3 pieces)
  • 1/2 cup radishes, chopped (~4-5 pieces)
  • 1 cucumber, chopped
  • 1 green pepper, chopped
  • 3 medium size tomatoes, chopped (remove seeds)
  • 1 cup pita chips

Dressing

  • 2 teaspoons sumac
  • 1/2 cup lemon juice
  • 3 garlic cloves, minced
  • 1/4 cupĀ  extra virgin olive oil
